Entrepeñas Wagyu Beef Ham brings the marbling associated with Wagyu into the Spanish tradition of cured beef. Known in Spain as cecina de Wagyu, it offers an intriguing starting point for a restaurant tasting plate, a private chef’s menu or a carefully chosen food gift.
It also has a specific reason to be on a buyer’s radar now: the Guild of Fine Food named it Great Taste Supreme Champion 2026, alongside its Golden Fork from Spain. For Deligoods, this makes it a discovery worth investigating, with both a recognisable ingredient and a story rooted in León.

What is Entrepeñas Wagyu Beef Ham?
The English name can cause some confusion. This is a cured beef product, rather than pork ham or a fresh Wagyu steak. Entrepeñas makes its Wagyu cecina in Geras de Gordón, in the province of León, applying its experience of curing meat to a particularly marbled raw material.
The producer describes salting, drying and curing as the foundations of the process. Its family business dates to 1948 and is now in its third generation. Those details help explain the product’s identity: an established Spanish curing tradition applied to Wagyu beef.
For a menu, “Wagyu cecina” followed by “Spanish cured beef” would be our preferred introduction. It identifies the product clearly without assuming that every guest knows the term. The word Wagyu alone should not be used to promise Japanese origin, a particular grade or a specific cattle pedigree; those details need confirmation for the product being purchased.
Why the Great Taste award matters
The Guild of Fine Food’s official 2026 winners record identifies Entrepeñas Wagyu Beef Ham as both Supreme Champion and the Golden Fork winner from Spain. The awards ceremony took place in London on 15 September 2026.
In its reporting, the Guild highlighted the judges’ appreciation of the meat’s tenderness, marbling, restrained smoke and developing beef flavour. These are attributed judging observations, rather than a tasting conducted by Deligoods.
An award is a useful reason to arrange a tasting. It does not decide whether a product will work on your menu, at your price point or within your service routine. We would treat the recognition as an invitation to assess the product thoughtfully, including how easily your team can explain it and how it compares with your existing cured-meat selection.
Where we see a place for it
For a restaurant or hotel, our first thought is a focused tasting plate. A distinctive cured beef could give guests something new to discover without requiring an entire menu concept around it. A short description, thoughtful presentation and staff familiarity would do more than a long list of superlatives.
A wine bar could assess it alongside an existing charcuterie selection, while keeping its identity distinct from pork-based products. A private chef might consider it as an opening course for guests interested in Spanish food. These are suggested applications, not claims that Entrepeñas has approved a particular pairing or that the product is already supplied to those settings.
For villas, yachts and private aviation catering, the first discussion should be practical. Timing, storage facilities, preparation and the final destination matter as much as the presentation. A product suited to a restaurant’s service may require different handling arrangements for a journey or an event.

How we would approach serving it
We would start simply, giving the cured beef space on the plate and keeping accompaniments restrained. Bread and a small, carefully chosen contrast could be a useful starting point for a kitchen trial. The purpose is to assess the product itself before building a more elaborate dish around it.
For drinks, we would taste alongside the wines already relevant to the venue rather than prescribe a universal pairing. Salt, fat, smoke and the other ingredients on the plate all affect the result. A team tasting is also the best opportunity to develop a clear description that reflects what staff actually experience.
Storage, preparation and service should follow the current product specification and your food-safety procedures. Curing should never be taken as permission to assume unrestricted shelf life or transport without appropriate temperature control.
Questions worth asking before ordering
A useful enquiry begins with the occasion, destination, required date and whether the intention is a one-off event or a repeat menu listing. From there, the relevant checks include the exact product identity, presentation, current ingredients and allergen information, shelf life, storage requirements and preparation needs.
For professional buyers, we would also establish the ordering conditions and whether the intended supply can be repeated consistently. For an international request, destination requirements must be checked before discussing a delivery commitment. An editorial feature cannot establish export eligibility or guarantee that a producer can supply every market.
Gifting needs the same care. Before choosing a cured meat as a present, consider the recipient’s preferences, dietary requirements and ability to store it correctly. Gift presentation should be confirmed rather than inferred from a serving photograph.
Questions about Wagyu cecina
Is it the same as jamón ibérico?
No. This discovery is made from beef. Jamón ibérico is a pork product. The comparison is useful for understanding a cured-meat serving occasion, but the two should be described separately.
Does Wagyu mean the finished product comes from Japan?
No. Entrepeñas produces this cecina in León. Any claim about where the cattle were raised, their pedigree or a grading system requires separate verification.
Can it be assumed suitable for a particular diet?
No. The beef description alone does not establish halal certification, allergen suitability or other dietary assurances. Request the current documentation for the exact product.
